The Restaurant team is captained by our high skilled Chef Aldo Cadau who oversees operations of Emerald Maldives Resort & Spa’s dining places. Sailing from Sardinia, Chef Aldo’s culinary passion in choosing high quality ingredients, started in his parents’ bakery, helping them in making fresh pasta, pastries and bread.

Inspired by his family, Chef Aldo continued his culinary journey and trained at the Hotel Institute in Arzachena, Italy. After his international experiences in many of the world's finest restaurants in Sardinia, Milan, UK, UAE, Qatar, Russia and Japan, he moved to the Maldives 5 years ago and has recently started his career at Emerald Maldives Resort & Spa.

At Emerald Maldives Resort & Spa, guests are free to follow their own eating habits with the Deluxe All-Inclusive meal plan, which allows everyone to find out its favorite meal among the 4 concept restaurants of the resort:

Aqua Restaurant

The Aqua restaurant offers guests a menu based on international cuisine (for breakfast, lunch & dinner) and a large buffet to delight every desire. The restaurant, with an elegant and colorful touch, is the perfect choice for dining just a few steps from the sea.

For breakfast Chef Aldo recommends:
Freshly baked pastries & bread, Honeycomb, Asian live station with steamed Chinese Bao Buns and live made waffles.

Must try at Lunch/Dinner:
Steamed Chinese Siew Mai, Japanese Gyoza (Dim-Sum), Pasta, Risotto, Grill with Fish & Meat live station.

Amazònico Restaurant

Those who choose to taste the traditional flavors of Central and South American cuisine, can dine at Amazònico restaurant. The uniqueness of this restaurant lies in letting guests immerge themselves into a 360-degree gastronomic experience, through authentic flavors, in an elegant and exclusive ambience.

Chef Aldo recommends:
Picanha, Wagyu Tajima Striploin MB6-7, Wagyu Sher Tomahawk Steak, Coconut milk Ceviche and Tiger milk Ceviche.

Le Asiatique Restaurant

Le Asiatique is intended for people who want to experience the original flavors of Asian Culture. The oriental appealing of the Restaurant is upheld by the beautiful interior design that surrounds guests, who may have the opportunity to admire a live cooking show, sitting in front of the Teppanyaki grill.

Chef Aldo recommends:
Asiatique salad, Tom Yum Talay (Thai seafood soup), Dim-Sum, Tsunami (seafood), Okonomiyaki (the traditional Japanese savory pancake with chicken cabbage & mushroom) and Moriawase (selection of Sushi, Sashimi and Maki Sushi).

Beach Club Grill

The Beach Club Grill restaurant is ideal for guests who want a quick but healthy meal, and those who prefer slow paced and refined food; discovering the pleasure of dining barefoot on the main beach, listening to the sound of waves.

Chef Aldo recommends:
Grilled Maldivian Lobster, Selected Grill Seafood Platter, Premium Angus Beef Tenderloin and Homemade Pizza.
